In French,an oyster, une huitre, is feminine. The Dugas family denotes this distinction to the oysters they have been harvesting from Caraquet Bay for over two centuries. They cultivate their own beds as well as procure selectproduct from the local fishery. Oysters grow slowly in the cool, clear waters of the region and develop a thick shell and a well formed cup. The shell is a deep green to brown colour containing delicious meats prized up the St. Lawrence and abroad.
