At Oyster Boy we work with a group of oyster growers called the “Outlandish Shellfish Guild”, that grow oysters in the bays and coves around the islands off of Campbell River, British Columbia. Ranging in size from tiny to huge, the Beach Angel oyster has a rugged, heavily furled shell often colonized by barnacles. As their name implies, these oysters are beach finished, deposited to mature on rocky beaches where tides roll them around, grinding the shells and creating a hard, compact case to guard the succulent flesh within.
